Sometimes breakfast just calls for something as simple as a muffin, and for anyone on the go it’s the perfect grab-and-go breakfast when you’re heading out the door quickly.  This recipe for Apple Cinnamon Muffins will give you something to enjoy when you’re rushing around, or just want to take your breakfast to go.


  • 1 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 2 apples, peeled, cored, and chopped
  • Topping
  • 1/2 cup white sugar
  • 1/3 cup all-purpose flour
  • 1/2 cup butter, cubed
  • 1 1/2 teaspoons ground cinnamon


  • Preheat oven to 400 degrees F
  • Grease six muffin tins or line with paper liners
  • Mix flour, sugar, salt, baking powder and cinnamon
  • Add oil, egg and milk
  • Fold in the apples
  • Spoon the batter into muffin cups, filling to the top
  • In a small bowl combine sugar, flour, butter and cinnamon meant for topping
  • Sprinkle mixture over unbaked muffins
  • Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean
